Status check
The last few months have been all about checking things off. So much has fallen into place that brewing—brewing!—is nearly here.
✓ Signage: we’ve put our mark on the building with an awesome sign made by the folks down the street at Signarama. You can’t miss us now!
✓ Bartop: our container bar features a laboratory tabletop and it’s so cool. We’re also pretty happy with the seating countertop.
✓ Buildout and certificate of occupancy: it’s been such a slog getting through the delays and jumping through hoops. Wow, are we beyond thrilled to have construction behind us.
✓ Licencing: whoop! This required more paperwork than expected, but we have our federal and state docs in place. We’re wrapping up with the town
✓ Koji room and walk-in: built from used insulated panels. The koji room will be kept quite warm when we are growing koji (the microorganism that converts rice into fermentable sugars), while the walk-in is a refrigerated room used for storing finished sake. Both are essential to getting delicious sake into glasses!
✓ Brewing equipment: suffice it to say that there’s lots of it. It’s installed. Bits and bobs are organized. We’re deep in the cleaning phase now.
✓ Ingredients: rice is in the house and yeast is on the way.
✓ Draft system: there are so many draft lines in our taproom! There will be choices.
✓ Taproom pops of color: remember the big gray box we built? We’ve filled it with color. There’s new lighting, door wraps, colorful counter seating, and The Best flight holders.
There’s more, but these are the highlights. Up next is more cleaning. April brings koji-growing and brewing.
