Pressed into Service
Sake fermentation happens with all the rice in the tank the whole time. This differs from other fermented beverages, so the sake brewing process requires different equipment. At the end of sake fermentation, the finished sake must be separated from all that mostly-dissolved rice matter. This is done with a press.
Our custom-made sake press has been manufactured and is being loaded on a ship for its long journey. Weighing in at 6 metric tons, this is our biggest piece of equipment. This monster will sail across the Pacific through the Panama Canal to the Port of New York because—according to the shipper—the Boston port will struggle with this size item. Once in New York, the shipping container will be trucked north and then a rigging company will help us position it in place in the brewery.
