Shine on!

With the amount of water we will need to slosh around the brewery, we’ve paid a lot of attention to the floors. In addition to all the drain work (remember that?), the concrete floors have been transformed with six days of work by an expert concrete company. We polished off 35 (or more!) years of dust and dirt to reveal an unimaginable light grey floor with many small rocks and even a few pieces of metal. Some extra passes with the fine-grit polisher in the taproom brought out all the glam. It looks out of this world! 

Crucial components for brewing and packaging arrived: the tanks and bottling line. They’re all in and look so great! It gives the whole place a shiny new look; now it is a brewery. Here’s what we got: 4 serving tanks, 2 small-batch tanks, 6 full-size production tanks, and a bottling line. That’s a lot of potential fermenting, serving, and packaging capacity. We can’t wait to energize that potential.

Now that we can position equipment--thank you, completed walls and floor--we were able to spend some time unpacking, which resulted in a huge pile of bubble wrap in our space!

Setting up the equipment is hard and there’s plenty more to do. There are so many wires and screws, but we’re getting it done and keeping the goal in sight. Sake in 2022. That’s the goal. We’ve got it.
